Easter is at the door! We need to make a plan for this brunch table! Try this Chocolate Easter Nests recipe to finish the feast on a high note! They are so easy to make, the kids could help to do them easily! I tried to keep it as low sugar as possible, but being an Easter recipe… one must surrender to chocolate. The kids will probably agree with me on this one. Easter equals chocolate!

Bran is the outer layer of popular grains, like wheat, oat, rice and corn, turned into a compressed cereal. It’s excellent for its fibre content, vitamins, protein, etc. Check this link if you want to know more about it. My version of Whole Bran, found in a Bio supermarket, was unsweetened, fantastic! Since it will be covered in chocolate, no sugar is better. You could also do these nests with shredded wheat cereal, mini pretzels, chow mein, vermicelli noodles, or even shredded coconut.
The Chocolate
Dark chocolate contains way less sugar than its milk version. I personally also like the bitterness of dark chocolate. Ultimately, you choose the chocolate you prefer, white chocolate included. Melting the chocolate is always a delicate process, so I highly recommend a bain-marie style (a bowl over boiling water). I added coconut milk to the chocolate to make it sweeter and tastier.
Pour the coconut milk warmed up to prevent the chocolate from seizing or getting unsmooth. Make sure the water under the bowl doesn’t touch, and the water is simmering gently. But frankly, even if it does seize, it doesn’t matter; the finish on these nests doesn’t need to be ultra smooth.

Kids to the Rescue
This is where child labour can start! Just kidding… But kids will love to mix up the chocolate and cereal together and form little nests! This recipe is almost too easy to write down. For the little ones with allergies, these nests don’t contain any nuts, eggs or lactose. I’ve added some extra shredded coconut peels to represent the feathers left behind by the mama bird. Of course, this last step is optional.

Can I Make it Ahead of Time?
Of course, no pressure; you can easily keep them in an airtight container for up to a week or two in the fridge and a few weeks in the freezer. So, there’s no pressure for the big Easter brunch day!
Is Whole Bran Gluten-Free?
No, Whole Bran contains gluten; although this recipe is lactose-free, nut and egg-free, it does contain gluten.

Ingredients
- 250 g whole bran tubular form
- 200 g dark chocolate milk or white chocolate
- 100 g coconut milk
- 1 tbsp sugar
- 1 tsp coconut shreds optional
- salt
Toppings
- 36 decorative chocolate eggs

Instructions
Melt the chocolate with the coconut milk in a bain-marie (bowl over boiling water).
Add the melted chocolate to the whole bran and mix.
On parchment paper, form the little nests and add the shredded coconut pieces.
Let it in a cool place to rest for 2 hours or until fixed.
Add the decorative eggs.
